Love chocolate cakes but hate the butter and sugar part?

Here is my all time favorite healthy chocolate cake
I bake this brownie type cake atleast once a week

So what's so special about this one?

Well, essentially this cake replaces the butter and potentially other non healthy ingredients with healthy substitutes. The result is an excellent chocolate cake you can eat as much as you like. Here's what's in it:

  • 200 gr. of chocolate with 85% cacao
  • 200 gr. of apple
  • 15 gr. of water
  • 50-ish gr. of sugar
  • 3 eggs
  • 50 gr. of flower
  • a tiny bit of bicarbonate
  • a drop of oil of your choosing

Step 1

Note that the original recepi was designed to be used with a Thermomix. Which is wat I use. However, I have made some modifications and will give you the indications assuming you don't have this equipment. I will assume that the maximum speed of your blender is 10.

  • Put the chocolate in the bowl and hash it
  • 8-9 seconds, speed 8
  • Not longer, the chocolate will melt
  • Pour out the crushed chocolate and keep aside

Step 2

As for the apple... Personally I prefer older apples. Those you had for about a week, 10 days and aren't that nice to eat anymore. A little softy. Also, try to use apples that do not have a very strong taste. Essentially apples are here to create more volume, you don't want to taste them.

  • Peal probably 2 apples
  • You need 200 gr. cut into small pieces
  • add 15 gr. water
  • add 20 gr. sugar
  • Heat them to 90°C / 194°F for 10 minutes
  • On a cooking blender: speed 1
  • Prefeably with a closed lit
  • While waiting, prepare oven plate with a little oil
  • After the 10 minutes...
  • Switch on the oven: 180°C / 356°F
  • Crunch at speed 8 for about 10 seconds
  • If there are still many small pieces (see images):
  • Speed 8 for about 10 seconds again

Step 3

adding the chocolate.

  • Add the chocolate you had put aside
  • add 20-30 gr. sugar
  • Mix at speed 3 for 10 seconds

Step 4

adding the eggs.

  • Add 3 eggs
  • Mix at speed 3 for 10 seconds

Step 5

adding the flower. The bicarbonate will help making the cake 'fluffy'. If you prefer it to be more solid, just leave it out.

  • Add 50 gr. flower
  • Add a little bicarbonate
  • Mix at speed 4 for 10 seconds

Step 6

bakin' the cake! The oil is to avoid the cake sticking to the plate and replaces butter

  • spread oil in the plate
  • Pour the preparation into the plate
  • Bake the cake for 22 minutes: 180°C / 356°F

Step 7

You have a fantastic chocolate cake! Enjoy! :-)

  • remove plate from oven
  • wait an hour or two
  • Enjoy! :-)

 

What else is there to say

Don't put it in the fridge. Just keep it at room temperature. On my 'slow weeks' it lasts for about a week without a problem. Chilling it will kill the taste.
